Breakfast Muffins

Good Sunday morning loves. Since years I connect sundays with an extensive brunch. I mean, with all the frills – croissants, scrambled eggs, etc, but as a sweet tooth, especially muffins are a highlight for me on every breakfast table. But please not only tasty, also as healthy as possible. Do you feel the same? Well, great, because today I’ve got my very favorite recipe for delicious breakfast muffins to share. It even copes without sugar and thanks to the usage of coconut flour it’s low carb but instead consists lots of proteins. Let me know how it tastes.

What you need for 12 servings
100g wholemeal flour
100g coconut flour (or just use 200g wholemeal in total)
60g oats 

2 large eggs
100g pureed apples (or apple sauce)
1 banana
100g blueberries

200ml low-fat quark (nature)
50ml oil
4 tbsp honey
1 tsp vanilla extract
1½ tsp baking powder
2 tsp cinnamon
4 tbsp mixed seeds (e.g. pumpkin, sunflower)

How it’s done
1. Preheat the oven to 180C (fan). Prepare a baking sheet with 12 large muffin cases
2. Mix the eggs, oil and quark in a jug
3. Puree the apples and mash the banana
4. Add the apple purée and mashed banana, the honey and the vanilla to the jug and mix well
5. Put the remaining, dry ingredients (except the seeds) into a large bowl, add a pinch of salt and mix to combine
6. Pour the wet ingredients into the dry. Mix well until the batter is smooth but don’t overmix to receive light, fluffy muffins
7. Now fill the batter into the muffin cases
8. Sprinkle the muffins with the seeds and some oats and bake until they’re well risen and turned golden – takes 25-30mins


Guten Sonntagmorgen an euch alle. Sonntag steht für mich seit Jahren in Verbindung mit einem ausgiebigen Brunch. Mit allem drum und dran natürlich – Croissants, Rührei, etc. und als Naschkatze sind besonders Muffins immer ein Highlight auf dem Frühstückstisch. Aber bitte nicht nur lecker, sondern auch so gesund wie möglich! Geht’s euch gleich? Na prima, denn heute gibts mein liebstes Rezept für köstliche Frühstücksmuffins, die sogar ganz ohne Zucker auskommen und dank Verwendung von Kokosmehl sogar Low Carb und stattdessen schön Eiweisshaltig ist. Lasst mich wissen, wie es euch schmeckt.

Was ihr für 12 Portionen braucht 
100g Vollkornmehl
100g Kokosnussmehl (oder einfach 200g Vollkornmehl insgesamt)
50g Haferflocken 

2 grosse Eier
100g pürierte Äpfel (oder Apfelmus)
1 Banane
100g Heidelbeeren 

200ml Halbfett Quark (nature)
50ml Öl
4 EL Honig
1 TL Vanillezucker
1½ TL Backpulver
2 TL Zimt
4 EL gemischte Kerne (z.B. Kürbis- und Sonneblumenkerne)

So gehts
1. Ofen auf 180 Grad vorheizen (Umluft). Backblech mit 12 grossen Muffinförmchen auslegen
2. Eier, Öl und Quark in einer Kanne vermengen
3. Äpfel pürieren und Banane zerdrücken
4. Pürierte Äpfel und Banane zusammen mit den Honig und dem Vanillezucker in die Kanne geben und gut mischen
5. Die übrigen, trockenen Zutaten (ausser der Kerne) in eine grosse Schüssel geben, eine Prise Salz beigeben und mischen
6. Die flüssigen Zutaten zu den trockenen geben und gut miteinander verarbeiten, bis ein glatter Teig entsteht. Achtung, nicht zu lange mischen, damit die Muffins schön luftig werden
7. Den Teig in die Papierförmchen füllen
8. Die Muffins mit den Kernen und etwas Haferflocken bestreuen und backen, bis sie golden werden und schön aufgegangen sind – ca. 25-30min
